En 1845 un grupo de cient\u00edficos descubri\u00f3 la planta trepadora del kiwi en los bosques de la cuenca del r\u00edo Yangts\u00e9, en China.<\/p>\n<p>En 1900 la planta del kiwi se introdujo en Inglaterra, y seis a\u00f1os m\u00e1s tarde, en Nueva Zelanda como planta ornamental. Poco a poco, la planta fue ganando prestigio y comenz\u00f3 a cultivarse en la d\u00e9cada de 1930, hasta convertirse su fruto en uno de los m\u00e1s apreciados productos neozelandeses. Gradualmente, este tipo de plantaci\u00f3n se fue expandiendo por Europa, introduci\u00e9ndose en Italia en 1971 y poco despu\u00e9s en Espa\u00f1a. Por lo tanto, el cultivo del kiwi en Europa es muy reciente.<\/p>\n<p>El kiwi\u00a0<em>(Actinidia Chinensis, Actinidia Deliciosa)<\/em>\u00a0es una fruta carnosa tropical obtenida del arbusto que recibe el mismo nombre. Es un fruto de forma ovoide cuyo tama\u00f1o, aunque variable, alcanza el del pu\u00f1o de una persona. La piel es marr\u00f3n y aparece recubierta de una fina pelusilla. La pulpa es verde, jugosa, de sabor agridulce y muy rica en vitamina C, minerales y fibra. Presenta numerosas semillas negras de peque\u00f1o tama\u00f1o; en un solo kiwi se pueden contar hasta 220 semillas.<\/p>\n<p>El kiwi se consume frecuentemente como\u00a0fruta fresca. Cuando est\u00e1 verde, resulta le\u00f1oso y muy \u00e1cido. Sin embargo, si est\u00e1 muy maduro, es blando y demasiado dulce. Su momento \u00f3ptimo de consumo es cuando pierde espont\u00e1neamente el ped\u00fanculo y su piel es ligeramente el\u00e1stica. Se corta por la mitad para extraer la pulpa con una cuchara. Tambi\u00e9n es posible cortarlo en rodajas o dados, una vez pelado.<\/p>\n<p>Adem\u00e1s, se puede emplear como\u00a0ingrediente<strong>\u00a0<\/strong>en otras recetas, acompa\u00f1ando a diferentes platos, aunque generalmente con fines decorativos.<\/p>\n<p>Tambi\u00e9n se puede utilizar en la elaboraci\u00f3n de\u00a0mermeladas,\u00a0sorbetes,\u00a0granizados,\u00a0c\u00f3cteles,\u00a0batidos\u00a0y productos de\u00a0reposter\u00eda\u00a0en general. En los \u00faltimos a\u00f1os tras el \u00e9xito del licor de manzana, el kiwi se est\u00e1 empleando para elaborar diversos\u00a0licores, algunos de ellos sin alcohol.<\/p>\n<p>Aunque menos frecuente, el kiwi tambi\u00e9n se consume\u00a0cocinado, por ejemplo, rehogado en mantequilla. De esta forma o a modo de\u00a0salsa, supone una adecuada guarnici\u00f3n para platos de carne.<\/p>\n<p><strong>SALSA DE KIWI:<\/strong><\/p>\n<p><strong>Ingredientes:<\/strong><\/p>\n<p>30 gr. de mantequilla<\/p>\n<p>30 gr. de cebolla picada<\/p>\n<p>500 gr. de kiwi (cortado en cubos)<\/p>\n<p>1 diente de ajo<\/p>\n<p>1\/2 taza de agua<\/p>\n<p>1\/2 taza de zumo de lim\u00f3n<\/p>\n<p>1\/2 taza de vinagre de manzana<\/p>\n<p>3\/4 de taza de az\u00facar.<\/p>\n<p><strong>Preparaci\u00f3n:<\/strong><\/p>\n<p>En una cacerola fundir la mantequilla, agregar la cebolla, el ajo y dejar cocinar hasta que se acitronen.
