Es una planta herb\u00e1cea perenne, de follaje muy ramificado y aspecto plumoso. Su cultivo dura bastante tiempo en el suelo, del orden de 8 a 10 a\u00f1os, desde el punto de vista de vida econ\u00f3mica rentable. La planta de esp\u00e1rrago est\u00e1 formada por tallos a\u00e9reos ramificados y una parte subterr\u00e1nea constituida por ra\u00edces y yemas, que es lo que se denomina com\u00fanmente \u201cgarra\u201d. De los brotes j\u00f3venes se obtienen las\u00a0verduras\u00a0conocidas como\u00a0esp\u00e1rragos. <strong>Sin duda,<\/strong> si hay que destacar una cualidad de los esp\u00e1rragos esa es su propiedad rejuvenecedora. Es junto a la remolacha roja, un vegetal cuyo consumo puede mantener la juventud durante m\u00e1s tiempo. Esta propiedad viene aportada por la presencia de \u00e1cido\u00a0del cual el esp\u00e1rrago es una de las plantas que posee en m\u00e1s cantidad. Esta vitamina contribuye a la creaci\u00f3n de c\u00e9lulas nuevas y tambi\u00e9n, junto con el hierro, en la producci\u00f3n de gl\u00f3bulos rojos.Otro de los elementos rejuvenecedores de los esp\u00e1rragos es su riqueza en zinc, muy importante para la buena salud del cerebro y como elemento que incrementa la fertilidad y la potencia.Para aprovecharnos de estas propiedades ser\u00eda conveniente comer este alimento crudo o cocido a baja temperatura. Esto es posible si se rayan los esp\u00e1rragos y se toman en laminas delgadas en ensalada, o bien si se cuecen al vapor durante 5-8 minutos.
