Originalmente procedente del Mediterr\u00e1neo occidental, es una planta\u00a0 que alcanza hasta los 2 metros de altura.<\/p>\n<p style=\"text-align: justify;\">Entre sus componentes hay que destacar a los hidratos de carbono, la insulina y la fibra. Los minerales que posee son el sodio, el potasio, el f\u00f3sforo y el calcio. Y entre las vitaminas destaca la abundancia de la vitamina C, la B1 y la B3.<\/p>\n<p style=\"text-align: justify;\">Sin embargo, lo m\u00e1s destacable de su composici\u00f3n son una serie de sustancias que se encuentran en peque\u00f1a cantidad, pero dotadas de notables efectos fisiol\u00f3gicos positivos:<\/p>\n<ul style=\"text-align: justify;\">\n<li>La\u00a0cinarina: sustancia \u00e1cida con capacidad para aumentar la\u00a0secreci\u00f3n biliar. Es\u00a0diur\u00e9tico, provoca mayor expulsi\u00f3n de\u00a0orina.<\/li>\n<li>Los\u00a0esteroles: con capacidad para limitar la absorci\u00f3n del\u00a0colesterol\u00a0en \u00a0el\u00a0intestino.<\/li>\n<\/ul>\n<p style=\"text-align: justify;\">Sus flores, al igual que las del\u00a0cardo, contienen el\u00a0fermento\u00a0\u00ablab\u00bb (que es un conjunto de 3\u00a0enzimas:\u00a0pepsina,\u00a0quimosina\u00a0y paraquimosina) que sirve como\u00a0cuajo\u00a0de la leche\u00a0para la elaboraci\u00f3n de\u00a0quesos. Cuando la cebolla est\u00e9 medio transparente, a\u00f1ade el tomate cortado a cuartos.Sazona a tu gusto. Tapa y deja hervir removiendo de vez en cuando, a media cocci\u00f3n \u00a0a\u00f1ade un buen pu\u00f1ado de aceitunas negras.
