Los citratos presentes en el salvado se desdoblan gracias al proceso de fermentaci\u00f3n y se convierten en compuestos mucho m\u00e1s saludables para tu organismo.<\/p>\n<p>S<strong>i el pan est\u00e1 hecho con harina integral, la fibra soluble e insoluble del salvado ayuda a controlar la absorci\u00f3n de las grasas y el colesterol y a reducir la velocidad con que los az\u00facares se absorben.<\/strong><\/p>\n<p>Tras una comida el salvado del pan de masa madre mantendr\u00e1 agua en el intestino y ayudar\u00e1 a estimular el est\u00f3mago haciendo que el tiempo de tr\u00e1nsito sea menor y que se reduzca la exposici\u00f3n de las paredes del intestino a las toxinas, algunas de las cuales se neutralizar\u00e1n debido los antioxidantes del salvado y del germen.<\/p>\n<p>El pan de masa madre dura mucho m\u00e1s tiempo. A veces se cr\u00edtica el pan de trigo porque contiene \u00e1cido c\u00edtrico que frena la absorci\u00f3n del calcio, sin embargo cuando se hace con levadura natural o sea a trav\u00e9s de una fermentaci\u00f3n lenta la enzima fitasa se ocupa de destruir el \u00e1cido c\u00edtrico acabando con el problema, en cualquier caso se recomienda no consumir pan en exceso. Notar\u00e1s que el pan de masa madre llena m\u00e1s que el normal y te saciar\u00e1s antes.<\/p>\n<p><strong>El pan de masa madre es poco recomendable comerlo reci\u00e9n salido del horno,<\/strong> es mejor esperar al menos unas horas y as\u00ed evitar que siente pesado, adem\u00e1s le das tiempo desarrollar todo su sabor. De hecho el pan est\u00e1 m\u00e1s rico el d\u00eda siguiente aunque la corteza no est\u00e9 crujiente.
