All\u00ed conocer\u00e1 en 2003 a Santiago Orts, quien le har\u00e1 cambiar para siempre su percepci\u00f3n del mundo vegetal. A partir de ese momento empieza a cocinar con productos \u00fanicos (d\u00e1tiles, c\u00edtricos&#8230;) originarios del huerto. Es el incipiente nacimiento de la\u00a0<strong>Gastrobot\u00e1nica<\/strong><\/p>\n<p>El destino le llev\u00f3 hasta\u00a0<strong>Mugaritz<\/strong>\u00a0, donde la cocina de Andoni L.
